HOW TO MAKE KETO ALMOND PULL APART ROLLS (ORIGINAL & COFFEE) - GRAIN, WHEAT, GLUTEN & SUGAR FREE
The texture of these rolls may appear to be a bit wet inside but it is perfectly fine as it is just moist. I tried adding less liquid or eggs but it becomes dry. So this texture is actually just right - soft, moist and flavorful ! I have tested them with family members who are carb eaters and they gave thumbs up. And these rolls are very flexible as you can add cheese or switch up the flavors with chocolate, cinnamon, pumpkin pie spice or even make them savory with herbs and spices.
The reason we cover the dough during the proofing process is to prevent a dry layer from forming at the top of the rolls. I have used dry towel all this while but there is a tendency of the dough sticking to the towel. So this time I tried with microwave safe cling wrap and it does not stick to the dough which is good. I understand that the heat of microwave oven is about 350F so since we're using only 212F with a steaming effect in the oven, it is acceptable in my opinion. But if you're concern, please feel free to use the dry towel instead.

INGREDIENTS
ORIGINAL ROLLS
Almond flour = 300 g / 2 1/2 cups
Psyllium Husk Powder (Finely Ground) - 45 g / 5 tbsp.
Baking powder = 13.5 g / 3 tsp
Eggs = 4 large egg whites or 3 whole eggs (room temperature)
Erythritol = 130 g / 0.64 cup (or any keto sweetener to taste) [Optional]
Instant or Rapid Rise Yeast = 12 g / 4 tsp
Salt = 1 tsp
Warm water = 200 ml / 0.83 cup (Temperature = 120 to 132 F or 50 to 56 C) [Note: This temperature DOES NOT kill the yeast]
For brushing = 3 egg yolks (lightly beaten with fork)
COFFEE ROLLS
Almond flour = 300 g / 2 1/2 cups
Psyllium Husk Powder (Finely Ground) - 45 g / 5 tbsp.
Baking powder = 13.5 g / 3 tsp
Eggs = 4 large egg whites or 3 whole eggs (room temperature)
Erythritol = 203 g / 1 cup (or any keto sweetener to taste) [Optional]
Instant coffee = 16 g / 4 tbsp. (Dissolve with 50 ml hot water) {Note: Taste and adjust to your preference]
Instant or Rapid Rise Yeast = 12 g / 4 tsp
Salt = 1 tsp
Warm water = 150 ml / 0.63 cup (Temperature = 120 to 132 F or 50 to 56 C) [Note: This temperature DOES NOT kill the yeast]
DIRECTIONS
1. Boil a pot or kettle of water.
2. Turn on oven at 212 F or 100 C and leave it on during the entire proofing process.
3. In a large bowl, use a handheld mixer to whisk the almond flour, psyllium husk powder, baking powder and erythritol until well combined.
4. In a small bowl, combine salt, yeast, warm water and stir until the salt is dissolved {Note: By dissolving the salt in water with yeast, it DOES NOT kill the yeast as there is proportional concentration).
5. Add the wet ingredients (including the instant coffee for coffee rolls) and yeast mixture into the dry ingredients and whisk until the yeast is well combined and a dough is formed.
6. Weigh the dough into 60 g portions each. This recipe makes 15 original rolls and 17 coffee rolls.
7. Shape the dough into balls with your hands. Place dough on a parchment lined square or rectangle tray just slightly touching each other. If doing two batches, refrigerate the first batch to slow down the fermentation while you work on the second batch. This is because we want both batches to ferment together during the proofing process. But if you're doing one batch only, then you can proceed with the proofing process.
8. Cover the dough loosely with a microwave safe cling wrap or dry towel.
9. Pour sufficient boiling water into a baking dish that fits the oven.
10. Place the baking dish with boiling water at the bottom of the oven and the tray with dough directly above it. Close the oven door and let it proof for 1 hour with the heat turned on at 212F or 100C. Do not open the oven door during the proofing process to prevent the warmth and humidity from escaping.
11. After 1 hour, remove the cling wrap or towel and the baking dish with water.
12. Brush the top of rolls with egg yolks to get a golden-brown look.
13. Bake for about 30 mins or until cooked (test with wooden skewer) at 350F or 180C at the lowest rack. Pre-heating of oven is not necessary.

These almond rolls are the softest, fluffiest rolls with the caramel topping. This is a Swedish recipe which I discovered relatively recently, about two years ago. And since then I bought and made them often. They are up there with the classic Swedish cinnamon rolls and that says a lot!

Coconut Almond Buns
Dough:
7g (2¼ tsp) active dry yeast
14g (1 tbsp) sugar
250ml (1 cup) warm milk
500g (4 cups) all-purpose flour
8g (1 tbsp) vanilla sugar or 1 tsp vanilla extract.
50g (4 tbsp) sugar
3g (1 tsp) salt
42g (3 tbsp) butter, melted.
1 large egg
I divide the dough into two and use only half for this recipe.
The other half of the dough I use it for another recipe.
Coconut filling for the half dough:
135g (1½ cups) desiccated coconut
42g (3 tbsp) melted butter
1 egg
125ml (1/2 cup) milk
50g (4 tbsp) sugar
1 tsp vanilla sugar
Indonesian
Roti Kelapa Almond
Adonan:
7g (2¼ sdt) ragi kering aktif
14g (1 sdm) gula pasir
250ml (1 cangkir) susu hangat
500g (4 cangkir) tepung serbaguna
8g (1 sdm) gula vanila atau 1 sdt ekstrak vanila.
50g (4 sdm) gula pasir
3g (1 sdt) garam
42g (3 sdm) mentega, lelehkan.
1 telur besar
Saya membagi adonan menjadi dua dan hanya menggunakan setengah untuk resep ini.
Separuh adonan lainnya saya gunakan untuk resep lain.
Isi kelapa untuk setengah adonan:
135g (1½ cangkir) kelapa kering
42g (3 sdm) mentega cair
1 telur
125ml (1/2 cangkir) susu
