How To make Almond Paste Macaroons
Almond paste: 2 c Blanched almonds
1 1/2 c Powdered sugar; sifted
1/4 c Egg whites; unbeaten
2 ts Almond extract
Cookies: 1 Recipe almond paste
above 2 c Sugar
1/4 ts Salt
4 tb Cake flour; sifted
2/3 c Powdered sugar; sifted
2/3 c Egg whites; unbeaten
Recipe by: Mary M McBride's Encyclopedia of Cooking For the Almond Paste, grind the almonds through the finest blade of a food chopper. Then grind twice again. Mix in the powdered sugar. Blend in the egg whites and almond extract. Mold into a ball. Place in a tightly covered container and refrigerate for at least 4 days to age. Makes 1 pound. Preheat oven to 325 degrees. Soften the almond paste with your hands and work in the sugar, salt, flour, powdered sugar and egg whites. Drop by teaspoonfuls 2 inches apart onto ungreased wrapping paper placed on cookie sheets. Pat the tops lightly with fingers dipped in cold water. Bake for 18 to 20 minutes, or until set and delicately browned. Remove from the

Almond paste cookies: the original Sicilian recipe to make a delicious treat
INGREDIENTS
250g (2 ½ cups) of almond flour
150g (1 ¼ cups) of powdered sugar
1 egg
1 egg white
3ml (½ tsp) of vanilla extract
Canned carries for decor
METHOD
1. Preheat the oven to 180°C/350°F.
2. Whisk almond flour with powdered sugar, add vanilla extract, egg, and egg white. Mix well until smooth batter forms.
3. Transfer the batter into a piping bag with a star tip on it, and pipe the cookies as shown in the video. Top with cherries.
4. Bake for 20 minutes.

powdered sugar for dusting tops and finishing
Bake 20 - 25 minutes in preheated 325 oven, rotate baking sheet if not browning evenly. Cookies should just begin to have a hint of brown.

Italian Almond Cookies with Maraschino Cherries | Sicilian Pastry (ONLY 3 INGREDIENTS)
Here in Sicily, these almond cookies are super popular! I would safely say that almost every pastry shop carries them. It was so much fun to re-create such a traditional sweet that I’ve seen for years in bakery shops since I was a kid.
These almond pastries are super easy to make and you only need 3 main ingredients. They are soft and chewy and a great dessert idea.
RECIPE:
250 g peeled almonds (1 cup + 1/3 cup + 1/3 cup)
150 g powdered sugar (about 1 cup)
2 egg whites
Maraschino cherries (about 15 cherries)
1 g Vanillin or 1 tsp vanilla paste (optional)
Lemon zest to your taste (optional)

Almond paste cookies: the Italian recipe to try!
Moist and chewy on the inside, crispy and crunchy on the outside. Made with just a few ingredients, they’re super easy to make!
INGREDIENTS
480g (4 1/4 cups) of almond flour
280g (2 3/4 cups) of powdered sugar
1 egg
Vanilla extract
2 egg whites
Candied cherries
METHOD
In a bowl add the almond flour, powdered sugar, egg, vanilla extract, egg whites, and mix until the mixture is smooth and homogeneous.
Pour the mixture into a whipped cream bag and make the pastries by squeezing the dough directly onto a baking sheet lined with baking paper. Then add the candied cherry in the center of each of the pastry.
Bake in the oven at 180°C/356°F for 20 minutes.
