INGREDIENTS:
-8 chicken thighs
●1/2 pound pancetta, cut into 1/2-inch dice
●2 large onions, julienned
●4 cloves garlic, smashed
●2 pounds assorted mushrooms, such as shiitake, oyster or cremini, cleaned and sliced
●2 cups dry white wine
●4 to 6 cups chicken stock
●1 bundle thyme
●4 bay leaves
●1/2 cup whole blanched almonds, toasted
●Sauteed Haricots Verts, recipe follows
●Chopped chives, for garnish
●1/2 pound haricots verts (baby string beans), stem ends removed
●Extra-virgin olive oil
●2 garlic cloves, smashed
●Pinch crushed red pepper flakes
●Kosher salt
Almonds Chicken
Almond Chicken is actually an Asian stir-fry dish that consists of pieces of marinated chicken and a good amount of vegetables that are cooked in butter or in oil with almond slivers or in peeled form that have been toasted in butter/oil. The use of the butter and toasted almonds provides the dish with a unique, nutty flavor that is carried through the different vegetables. The selection of vegetables, including mushrooms provides a textured, flavorful complement to the chicken and almonds. The completed dish can be served over a bed of steamed white rice, with fried rice or plated by itself for a hearty balanced meal. In this vedio i will show you how to make yummy, easy CREAMY PARMESAN GARLIC MUSHROOM CHICKEN recipe.
INGREDIENTS
4 boneless, skinless chicken breasts, thinly sliced
2 Tablespoons Olive oil
Salt Pepper
8 ounces sliced mushrooms
Creamy Parmesan Garlic Sauce:
¼ cup butter
2 garlic cloves, minced
1 tablespoon Almond flour
½ cup chicken broth
1 cup heavy cream or half and half
½ cup grated parmesan cheese
½ teaspoon garlic powder
¼ teaspoon pepper
½ teaspoon salt
1 cup spinach, chopped
INSTRUCTIONS
In a large skillet add olive oil and cook the chicken on medium-high heat for 3-5 minutes on each side or until brown on each side and cooked until no longer pink in center. Remove chicken and set aside on a plate. Add the sliced mushrooms and cook for a few minutes until tender. Remove and set aside.
To make the sauce add the butter and melt. Add garlic and cook until tender. Whisk in the flour until it thickens. Whisk in chicken broth, heavy cream, parmesan cheese, garlic powder, pepper, and salt. Add the spinach and let simmer until it starts to thicken and spinach wilts.
