2 1/2 c All-purpose flour 1 c Sugar 1 c Unsalted butter; softened 1 lg Egg 1 ts Baking soda 1 ts Vanilla 6 oz Almond brickle bits Preheat oven to 350F. In large mixer bowl combine all ingredients except almond brickle bits. Beat at medium speed, scraping bowl often, until well mixed (2 to 3 minutes). Stir in almond brickle bits. Shape rounded teaspoonsfuls of dough into 1-inch balls, place 2 inches apart on greased cookie sheets. Flatten to 1/4-inch thickness with bottom of glass dipped in sugar. Bake for 8 to 11 minutes, or until edges are very lightly browned. -----

HEY GUYS! Chantel here back with ANOTHER AWESOME RECIPE. Today, I am going to be teaching you how to make the BEST PALEO ALMOND BUTTER COOKIES you will ever eat! The recipe is right down BELOW!
What You Will Need: •1 cup homemade almond butter (or store bought), room temperature •1 cup coconut sugar •1 large egg, room temperature •1 teaspoon baking powder •1 teaspoon pure vanilla extract
Instructions: •Preheat oven to 350º with 2 oven racks closest to the center. Line 2 cookie sheets with parchment paper. •Combine all ingredients in a medium size bowl and stir to combine. •Use a medium size cookie scoop to scoop out the dough (1.5 tablespoon balls), placing 8 cookies on each sheet (4 rows of 2 that are staggered). •Bake for 9-10 minutes, until the edges are set and the centers are puffed. (The cookies will flatten and “crackle” as they cool) Cool for 10 minutes and enjoy! Particularly good with my homemade almond milk. •Cookies will keep in an airtight container for 1 week, or in the freezer for 1 year.

ALMOND/BADAM BUTTER COOKIES
Ingredients Maida - 100gm Badam powder - 30 gm Sugar powder - 70 gm Butter - 90 gm Baking powder - a pinch Vanilla essence –few drops Cookie cutter Method Preheat the oven at 180’C for 10 minutes. Sieve maida with baking powder. Beat butter and sugar until smooth & fluffy. Into it add maida, badam powder, vanilla essence & knead to a smooth dough. Roll it into ¼ inch thickness. Cut out using cookie cutter. If you want you can mark with a fork. Bake at 180’C for 12-15 minutes.
