Directions:
Preheat oven to 350 degrees. In a small, heavy-bottomed pan, melt chocolate and shortening, stirring over low heat until smooth and melted. Remove from heat and stir in vanilla. In large bowl, combine flour, sugar, baking powder, baking soda and salt. Add chocolate mixture, milk and eggs, beating until smooth. Spread mixture in two greased and floured 9 inch round cake pans.
Bake for 30 to 35 minutes or until toothpick inserted in center of cake comes out clean. Cool in pans 5 minutes before turning out onto wire rack.

This is the most amazing Chocolate Cake! My secret ingredient makes this cake so super moist! I chose to frost this Cake with American Chocolate Buttercream Frosting but it certainly tastes great with any kind of Frosting!
This is how to make Chocolate Cake with American Chocolate Buttercream Frosting:
Super Moist Chocolate Cake with American Chocolate Buttercream Frosting
Ingredients:
300 g All-Purpose Flour/ 2 cups
80 g Unsweetened Cocoa Powder, sifted/ 2/3 cup
Baking Soda/ 1 1/4 tsp
Baking Powder/ 1/2 tsp
1/2 tsp Salt
400 g Sugar/ 1 3/4 cups
4 Eggs
1 tsp Vanilla Extract
250 g Mayonnaise/ 1 cup
340 ml Cold Water/ 1 1/3 cups
Chocolate Buttercream Frosting:
350 g Butter, softened/ 1 1/2 cups
500 g Confectioner's Sugar, sifted/ 4 cups
80 g Unsweetened Cocoa Powder, sifted/ 3/4cup
1 tsp Vanilla Extract
4 Tbsp Milk
Directions:
1. Preheat oven to 175 °C/350°F. Grease three round baking pans (20 cm/8 inch) and line the bottom with parchment paper.
2. In a medium mixing bowl, add the flour, cocoa powder, baking soda,baking powder and salt. Give this a quick mix and set aside.
3. In a large mixing bowl, add the sugar, eggs and vanilla extract. Beat this until light and fluffy.
4. Add in the mayonnaise, beating on low speed just until well combined.
5. Add the flour mixture alternating with the water into the mixture. Mix everything until fully incorporated.
6. Pour the mixture into the prepared baking pans and bake for 30 - 35 minutes or until a toothpick inserted in the center comes out clean.
For the Buttercream:
1. Add the butter to a mixing bowl or the bowl of a stand mixer and beat for 5 minutes until light, pale and doubled in volume.
2. Gradually, add in the sifted confectioner's sugar and cocoa powder. Beat this until well combined.
3. Once all of the sugar has been incorporated add the vanilla and milk and beat until you have reached your desired consistency.
4. Frost your cooled cakes.

I'm finally sharing my perfect chocolate cake recipe - This is always a favorite of my clients, family and friends.

PERFECT CHOCOLATE CAKE RECIPE
8 oz unsweetened chocolate
4 C sugar (3 3/4 C for high altitude)
3 C flour (3 1/4 C for high altitude)
1 1/2 tsp baking soda (1 1/4 tsp for high altitude)
1 tsp salt
2 C HOT water with 10 tsp coco powder dissolved in it (2 1/4 C water for high altitude)
1 C sour cream OR greek yogurt
1 C vegetable oil
4 Lrg eggs lightly beaten
Preheat the oven to 345
Prepare three 8 or 9 inch round cake pans (if doing 8 inch pans I suggest 3 inches tall pans, or four of the 2 inch tall 8 inch pans) I use parchment paper circles on the bottom and a non stick spray on the sides
Melt the baking chocolate in double broiler (or in a bowl over a simmering pot of water) then let it cool.
In a large bowl, or bowl of a mixer add the sugar, flour, soda and salt and whisk together.
In a separate bowl (or a large glass measuring cup) mix the hot water and cocoa
Then add the sour cream and oil and whisk.
Add the wet mixture in a stream to the dry ingredients and mix until blended.
Add the lightly beaten eggs and beat.
Add the cooled melted chocolate and mix until uniform in color.
Bake at 345 40-45 mins (raise the heat by 25 degrees and lower the time by 5 mins for high altitude)
CHOCOLATE GANACHE BUTTERCREAM
20 oz chocolate chopped
1 1/2 C cream
2 tbsp corn syrup (stabilizing)
2 C butter – slightly softened
1-2 C powdered sugar
Place the chocolate into a large bowl
in a saucepan heat the cream and corn syrup - until just about to simmer
Pour it over the chocolate and let it sit for 5 mins - then stir
Let the ganache cool to room temp
Beat butter and add 1 C powdered sugar
add more if needed to achieve a thick buttercream
pour the ganache into the buttercream and beat.
Chill for 5-19 mins n the fridge, beat again, chill, beat, chill, beat - until your happy with the thickness

250g Unsalted Butter
250g 70% Chocolate
180ml Brewed Coffee (or 180ml Hot water with 2 tbsp Instant Coffee Granules)
4 Eggs
150ml Buttermilk (see link below for how to make your own)
3 tbsp Vegetable or Sunflower Oil
430g caster sugar
150g Plain Flour
150g Self Raising Flour
60g Cocoa Powder
3/4 tsp Bicarbonate of Soda
1/2 tsp Salt
430g Caster Sugar
100g Butter
200g Chocolate (I like 50% for ganache)
100g Double Cream
If you want to fill and ice with ganache you can double this quantity.
125g Soft Unsalted Butter
225g Icing Sugar
80g Melted Chocolate (70% is best for buttercream)
If you want to fill and ice with buttercream you can double this quantity.
For a 6 cake follow these ingredients. If you need something even smaller just halve all of the ingredients!
