How To make Alaska Salmon& Avocado Pasta Salad
6 oz Dry pasta (macaroni, penne, rotini
or shells
1 cn Alaska salmon (14 3/4 oz)
2 tablespoons French dressing
1 Red bell pepper :
thinly sliced
3 tablespoons Cilantro or parsley chopped
1 Lime :
juiced/rind grat
1 tablespoon Tomato paste
1/2 cup Sour cream
Paprika to taste 1 bunch Green onion thinly sliced
2 tb Light mayonnaise
3 Ripe avocados :
diced
Lettuce leaves to serve on
Cook the pasta according to package directions. Drain and toss with the French dressing. Allow to cool. Drain and flake the salmon. Add to the pasta with the green onions, sliced bell pepper and cilantro. Whisk together the lime juice and grated rind, the mayonnaise, sour cream and tomato paste until thoroughly combined. Toss the pasta salad with the dressing. Season to taste with salt and pepper; cover and chill. Before serving, gently toss the avocados into the salad. Spoon the salad onto a bed of lettuce leaves. SALAD INGREDIENTS:
►1 lb Roma tomatoes
►1 English cucumber
►½ medium red onion, sliced
►2 avocados, diced
►2 Tbsp extra virgin olive oil or sunflower oil
►Juice of 1 medium lemon (about 2 Tbsp)
►¼ cup (1/2 bunch) cilantro, chopped
►1 tsp sea salt or ¾ tsp table salt
►⅛ tsp black pepper

Pink Salmon Avocado Salad

Serves: 4-6
1 can Crown Prince Natural Skinless & Boneless Alaskan Pink Salmon, drained and chunked
2 large Haas avocados, seeded, peeled and sliced
1 cup halved heirloom cherry tomatoes
½ small red onion, sliced
½ English cucumber, sliced
2 ½ oz. mixed baby greens
1 lime, juiced
3 tbsp extra virgin olive oil
salt and black pepper, to taste
Combine all ingredients in a large mixing bowl and gently toss to combine. Serve immediately.

Grilled Salmon with Avocado Salsa
RECIPE:

Ingredients
1 Tbsp. olive oil
1 tsp salt
1 tsp pepper
1 tsp paprika
4 salmon fillets
Avocado Salsa
2 avocados
1/4 red onion
1 lime, juiced
1 Tbsp. olive oil
1 1/2 tsp salt
chopped cilantro *optional garnish
Instructions:
1. In a large bowl, mix oil, salt, pepper, and paprika. Coat the salmon fillets with the marinade and refrigerate for 30 minutes.
2. Grill the salmon on high heat for 2 minutes each side.
3. In a separate bowl, lightly toss avocados, 1/4 red onion, the juice from 1 lime, 1 Tbsp. olive oil and salt to taste.
4. Spoon avocado salsa on top of the cooked salmon. Top with finely cut cilantro and enjoy!
