This fabulous vegan dip is a fan favourite at parties. Made with roasted sweet red peppers, it’s further flavoured with roasted eggplant, garlic and vinegar. Talk about YUM!!!
When selecting your peppers, the sweeter the better – plump red bells and large shepherd peppers work best. The only finicky step in the recipe is the peeling and seeding of the peppers. Take your time and do your best to remove all of the blackened skin and seeds to create a richly flavoured dip.
Last thing to mention, bread! We like to serve AJVAR with a warmed flatbread like Manoucher Bread's BARBAREE – so perfect and, delicious!
Here’s how to make AJVAR – Roasted Red Pepper Dip!
INGREDIENTS
8 sweet red peppers
1 eggplant
2 cloves of garlic, chopped
3 T of white vinegar
¼ C of vegetable oil
salt and pepper to taste
INSTRUCTIONS
1) Place peppers and eggplant onto a very hot grill. Roast, turning occasionally while the skins blacken and blister. Transfer roasted vegetables to a large bowl and cover with foil. Cool completely.
2) Peel the skins and seeds away from the peppers. Peel the skin from the eggplant and roughly chop the flesh. Place the prepared peppers, eggplant, garlic and vinegar into a food processor and run on low to roughly chop. Slowly add the oil and process to desired consistency – chunky or thinned. Season with salt and pepper.
3) Transfer to a bowl and serve with warmed bread. Store in an airtight container and consume within 10 days.

Pepper spread
Ingredients are;
15 kg red peppers ????
Wash them 
Roast them
Pill them
Take the seeds out
You can Take the Seeds out Before you rost them to
Let them Drain overnight
Grind them
Make the brine
250 gr sugar
250 ml wine vinegar
1 liter oil
Salt to your taste
Double the amount for more peppers ????

Ajvar is a beloved Croatian sauce that’s found across southeastern Europe. I first discovered it in Zagreb, Croatia when I ordered a late night cevapi (a Croatian-style sausage), and found my sausage smothered in the subtle red condiment — it was love at first bite. The sauce is made up of roasted red peppers and eggplant, and has a subtly smoky flavour that pairs well with just about everything. To make my ajvar slightly thicker and dippable, I simmered it on the stove after blending, but it’s perfectly delicious without that extra step.

I love the aroma of roasted red peppers and eggplants. This is the scent of the incoming autumn, a scent from my childhood. „Kiopoolu” is a very popular roasted eggplant and pepper spread in Bulgaria. I love it!
