Serbian Ajvar Relish
Ajvar relish is a Serbian roasted red pepper condiment with vibrant color and flavor. Make this ajvar recipe at home with just 5 ingredients!

Ingredients
2 lbs red bell peppers (about 4-5, See Note below)
1 lb eggplant (1 medium sized)
4 garlic cloves
¼ cup olive oil
1 tbsp white vinegar
1/2 tsp salt
1/2 tsp black pepper
Instructions
Heat a grill to medium heat (350-400°F) and lightly oil the grates.
Using a fork, poke holes into the eggplant skin in several areas and set it on the grill along with the red peppers.
Grill the eggplant and peppers about 20 minutes, turning occasionally, until the red pepper skins char and puff up and the eggplant softens and wrinkles all over. Remove red peppers and turn off heat. Leave eggplant for another 5 minutes on grill.
Place peppers in a bowl and cover them with a towel to let them steam. When cooled, peel off the charred skins and remove the seeds and stems. Cut off the stem from the eggplant, slice it lengthwise and scoop out the eggplant flesh. Discard the skin and stem.
Add the roasted peppers and eggplant to a food processor along with the garlic, oil, vinegar, salt and pepper. Process it to a smooth texture.
Scrape the mixture into a saucepan and simmer for 20 minutes to cook the garlic and mellow the flavors. This is a slightly sweet, earthy flavored sauce. If you'd like it spicy, add a 1/4 teaspoon of ground cayenne powder at this point. Season with salt.
Serve with grilled meats, flatbreads, croutons or crackers of choice. Great as a vegetable dip as well.
This makes about 2 1/2 cups. Store in an airtight container, lasts 5-7 days.
Note: The best peppers to use are the bull's horn peppers (aka red bull's horn peppers). Bull's horn peppers are curved, sweet, red peppers resembling a horn. They are known as roga in the Balkans. A substitute I use if unavailable are red bell peppers.

AJVAR | Best Summer Dip With Grilled Red Pepper & Eggplant
We are making AJVAR, another delicious spread from two of the blessed summer veggies red peppers and eggplants! With grilling the veggies and bringing all the flavors together it is packed in flavor, surely a wonderful company as a dip or spread for breakfast.
Ingredients For Ajvar:
1 kg. eggplant
1 kg. capia red peppers
2 onion
3 cloves of garlic
about 5-6 tbsp olive oil
about 1-2 tbsp grape vinegar
hand blender or food processor to puree (If you don't have it, make sure to chop it finely after grilling and skinning)

Croatian Ajvar: how to make delicious red pepper and aubergine relish
It's this time of the year again, time to make Croatia's most beloved relish – ajvar.
Here is my full proof recipe. You'll have your hands full but the homemade ajvar is always the best.
INGREDIENTS:
7 kg bull's horn peppers
3 kg aubergine/eggplant
60 g sea salt
2 tbs black pepper
2 tbs red chilli flakes
300 ml oil (200 ml sunflower + 100 ml olive oil)
40 ml vinegar
12 cloves of garlic
3 tbsp chopped parsley
100-150 ml hot sunflower oil for preserving
A few tips:
✅ Stir all the time
✅ Add oil gradually, at least in 3 goes
✅ Set the timer to 2.5 hours and don't stop stirring before, even if it seems ajvar is done ????
