How To make African Tomato Avocado Buttermilk Soup

tomato paste

buttermilk

olive oil

avocado, mashed to a puree
1
whole
lemon, juice of
2
tablespoons
parsley, fresh, finely minched
1
salt, to taste
1
pepper, to taste
1
hot pepper sauce, to taste
Garnish:
1
cucumber, peeled, seeded and diced
1
sour cream, or plain yogurt
Directions:
Puree tomatoes in a food processor or food mill, then press through a sieve to remove seeds. In a large mixing bowl, beat the pureed tomatoes, tomato paste, buttermilk, and oil.
Toss pureed avocado with 1 tablespoon lemon juice to hold the color. Add the avocado, remaining lemon juice, and parsley to the tomato mixture; stir to mix well. Season to taste with salt and pepper, and a generous number of drops of hot pepper sauce.
Refrigerate several hours before serving.
At serving time, taste soup for seasonings. Ladle into individual bowl and have guest garnish their portions with cucumber and sour cream. Pass hot pepper sauce around to add more piquancy.
Makes 8 to 10 servings.

Avocado Buttermilk soup
Ingredients:
Avocado – 1 large, peeled and de-seeded
Buttermilk – 1 large glass
Red onion – ½ medium size, diced
Tomato – ½ medium size, diced
Green/Red chilli – 2 medium spice
Garlic cloves – 5 medium size
Ginger- 1 inch, peeled
Coriander leaves – 1 small bunch
Black pepper powder – 1 tsp
Black pepper corns – 17
Lemon – ½ slice
Salt as per taste
For garnish:
Fresh ground pepper
Spring onions
Basil leaf
Honey
Instructions:
Take a blender. Add chopped onion, tomato, coriander leaves, green/red chillies, garlic cloves, ginger, pepper corns and blend into coarse paste.
Add cut Avocado into the spice mix and blend into fine paste. Add ½ glass buttermilk, black pepper powder, salt, lemon juice and blend well.
Now, add water, remaining portion of butter milk and mix well. Adjust the consistency by adding more water or buttermilk according to your preference. That’s it. Simple and tasty Avocado buttermilk soup is ready in 5 minutes.
Pour the soup into the serving bowl. Garnish with fresh ground pepper, spring onions and a sprig of basil leaf. Serve it immediately. You may also chill it in the refrigerator for at least 2 to 3 hours before serving. Enjoy the cool, sweet, spicy & creamy Avocado buttermilk soup. It tastes heavenly ????.
NOTE: You can also add a teaspoon of honey for garnish just before serving.
