Ingredients 750 grams pork fillet, leg, or loin 1/4 cup butter 500 grams new potatoes, peeled 250 grams small mushrooms 1 cup red wine 1
salt, to taste 1
pepper, to taste, freshly ground 2 teaspoons coriander seeds, crushed
Directions: Cut pork into approximately 3 cm (1-1/4 inch) pieces leaving some fat on meat as this is desirable. Heat half the butter in a heavy based pan and brown potatoes. Remove and keep aside. Add remaining butter and brown pork on each side, push to side of pan. Trim and clean mushrooms and fry quickly in pan next to meat. Stir to combine. Reduce heat to low. Pour in wine, add salt and pepper to taste and place potatoes on top. Sprinkle with coriander seeds, cover pan with lid and simmer over low heat for 45 minutes or until pork and potatoes are tender. PORK STEW COOKED IN THE OVEN “AFELIA” 600g pork shoulder steaks 300g button mushrooms, whole 4 slices bacon 2 large onions, sliced 3 tablespoons olive oil, for frying 2 tablespoons coriander seeds, crushed 2 glasses Red dry wine 2 bay leaves ½ teaspoon ground cumin Salt and ground black pepper to season Marinade ingredients Place the pork in a glass bowl with the wine, Coriander seeds, bay leaves, cumin, Salt and black pepper, mix and cover with cling film and let it marinate overnight.
