Norwegian Cream Cake (Blotkake)

Yield: One 9-inch cake
Ingredients
5 large eggs
2 cups (400 grams) sugar
1/2 cup (120 grams) water, at room temperature
2 1/2 cups (325 grams) all-purpose flour
2 heaping teaspoons baking powder
1 teaspoon kosher salt
Whipped Cream (see recipe below)
Sugared Cranberries, for decorating (see recipe below)
Rosemary sprigs, for decorating
Whipped Cream:
3 cups (720 grams) cold heavy cream
1/4 cup powdered sugar
1/2 teaspoon vanilla extract
Sugared Cranberries:
2 1/2 cups fresh (or frozen and thawed) cranberries
1/4 cup granulated sugar
Directions
Set an oven rack in the middle position. Preheat the oven to 325 degrees F.
Grease a 9-inch springform pan and line the bottom with parchment paper.
To make the cake: In the bowl of a stand mixer fitted with whisk attachment, beat together the eggs and sugar until pale and fluffy, 3 to 4 minutes. Using a rubber spatula, scrape down the sides and bottom of the bowl, if needed. Beat in the water. Remove the bowl from the mixer. Gradually sift in the flour and baking powder and fold together with a rubber spatula until just combined. Transfer to the cake pan and bake until the center springs back when you poke it; 1 hour to1 hour and15 minutes. Cool in the pan.
To assemble the cake: Once the cake is cooled, slice in half crosswise. Place the bottom of the cake cut-side up on a cake round or directly onto a cake stand or serving platter. Spread whipped cream on top and dot with a layer of sugared cranberries. Place the remaining half of the cake on top, cut-side down. Spread the whipped cream on the top and sides of the cake to cover. Decorate the top of the cake with remaining cranberries and a few sprigs of rosemary.
Whipped Cream:
Yield: About 6 cups
In a large mixing bowl with a hand-mixer, or in the bowl of stand mixer fitted with the whisk attachment, beat the heavy cream, sugar, and vanilla to medium-stiff peaks.
Sugared Cranberries:
Yield: About 2 cups
Just before assembling the cake, combine cranberries and sugar in a bowl and toss to coat.

When rhubarb is in season and I have too much on hand, I make my favorite rhubarb coffee cake recipe! Happy spring!

INGREDIENTS
- 3/4 cup white granulated sugar
- 3/4 cup light brown sugar
- 2 cups + 1 tbsp flour, separated
- 2 tsp baking powder
- 1 tsp salt
- 1 1/2 tsp cinnamon
- 3/4 cup butter cold, cut into pieces
- 2 large eggs
- 1 cup sour cream
- 1 tsp vanilla extract
- 1 1/2 cups chopped rhubarb
INSTRUCTIONS
- Preheat oven to 350°F. Grease a 9x9 baking dish and set aside.
- In a large bowl, combine the white sugar, brown sugar, 2 cups flour, baking powder, salt, and cinnamon.
- Add the pieces of cold butter and cut them into the dry ingredients until the mixture resembles wet sand with pieces of butter the size of a pea or smaller. Remove 1 1/4 cups of the mixture and set aside.
- To the remaining crumbled mixture left in the bowl, add the eggs, sour cream, and vanilla. Whisk until combined and pour into prepared baking dish. Add the chopped rhubarb on top, sprinkle with the remaining 1 tbsp flour. Top with reserved streusel.
- Bake in preheated oven until golden and a skewer inserted into the middle of the cake comes out clean, 45-60 minutes. Remove from oven and cool 15 minutes before serving.

Bundt Coffee Cake with Pecan Streusel Crumb Topping - Nordic ware Heritage Bundt Pan

We are very excited to share this recipe. We rarely eat cake for breakfast but this coffee cake is too good to pass. The Coffee cake looks beautiful thanks to the nordic ware heritage pan (link to amazon below).
This coffee cake is wholesome, it is butter free and it’s perfect for starting the day with your coffee. Especially during fall the pecans in the butter free streusel topping make it extra yummy. It’s like breakfast bliss! You can also eat this delicious crumb coffee cake for dessert with your favorite gelato or ice cream.
What is coffee cake, exactly?
Coffee Cake is a cake that does NOT contain coffee and this recipe has NO BUTTER! It’s somewhere between a pound cake and regular cake in terms of texture and weight. It’s not over the top sweet and is meant to be paired with a cup of coffee- hence the name!
For this Coffee Cake in a Bundt Pan, you mix it by hand. It’s NO MIXER COFFEE CAKE since all the ingredients are gently incorporated. This is super easy to make and simple.

Directions
-Mix Flour, sugars, cinnamon, ginger and salt.
-Stir in oil until mixture is crumbly.
-Remove 3/4 cup of this mix and add the chopped pecans to it.
-Sprinkle this mixture evenly into the bottom of a 10 cup Nordic ware Heritage Bundt Cake Pan
-Add the baking soda, baking powder, egg and butter milk to the remaining mix.
-Mix until smooth with no lumps
-Pour this evenly over the crumb mix in the pan.
-Bake in a preheated 325f oven until baked. approx. 70minutes.
