How to Make Easy Buttermilk Cornbread Muffins
Sweet, buttermilk cornbread muffins that are super easy to make and super tasty too. It doesn’t get any easier!

✅Ingredients
• ½ cup butter, melted
• ⅔ cup sugar
• 2 large eggs
• 1 cup buttermilk
• ½ teaspoon baking soda
• 1 cup cornmeal
• 1 cup flour
• ½ teaspoon salt
✅Instructions
1️⃣ 00:00:14 - Preheat the oven to 375 degrees. Grease a muffin tin or line it with cupcake liners.
2️⃣ 00:00:20 - In a medium-sized bowl combine the melted butter with the sugar. Beat in the eggs until well blended.
3️⃣ 00:00:40 - Add in the baking soda and then slowly pour in the buttermilk while you stir.
4️⃣ 00:00:51 - Add in the cornmeal, flour, and salt and stir until well combined. Pour batter into the prepared muffin tin.
5️⃣ 00:01:19 - Bake in the 375 degree oven for about 20 minutes, until the tops start to brown.

A few days ago I was at Windy Acres farm apple picking. Now I have all these apples I need to do something with. Lets to a recipie review show down. I found 2 recipies that I would like to try out so lets see how this turns out. Both are grain free, gluten free, and one is paleo! I also made minor modifications to the golden barrel recipie to make it IBD Aid compliant, by swapping coconut sugar, and maple syrup for honey.

Homemade Blueberry Muffins!! How to Make Fruit Muffins from Scratch
Learn how to make moist and tender blueberry muffins at home! Loaded up with fresh blueberries, topped with coarse sugar and baked until golden brown, these are the perfect breakfast or morning snack! You can also use raspberries, strawberries, blackberries, make them triple berry, etc. Any berry will work for this recipe.
What you'll need:
1 3/4 cups all-purpose (plain) flour
3/4 cup white sugar
1/2 tsp salt
2 tsp baking powder
3 ounces (6TBSP) vegetable oil
1 large egg, beaten
1/2 cup milk
1 1/2 tsp white vinegar
1 tsp vanilla extract
1 cup fresh blueberries (or frozen, thawed first)
coarse sugar for topping
In a small bowl, combine milk and vinegar and set aside. (Alternatively, use 1/2 cup commercial buttermilk.)
In a large bowl combine flour, sugar, salt and baking powder. Mix well and add in blueberries and toss to coat. Add in milk and vinegar mixture, oil, egg and vanilla and mix just until incorporated. DO NOT OVER MIX! Mix only until no more dry ingredients remain. Let rest for 15 minutes.
Prepare your muffin tin by greasing the tops (or entire cups if not using cupcake liners). Evenly divide batter into 8 muffin spots. Top with coarse sugar and bake in a preheated 450*F oven for 10 minutes, reduce heat to 350*F and bake an additional 10-12 minutes. Let cool slightly and then serve! Store in an airtight container. Makes 8 medium muffins.
*For jumbo muffins, bake at 450*F for 12 minutes, reduce heat to 350* and bake an additional 12-14 minutes. Makes 6 jumbo muffins.
**For mini muffins, bake at 450*F for 5 minutes, reduce heat and bake an additional 4-6 minutes. Makes 20-24 mini muffins.

2lbs ground beef
1 small finely diced onion
1/2 cup finely diced bell pepper(color doesn't matter)
1 1/2 sleeves crushed Ritz crackers
3 eggs
4 oz. shredded Colby Jack cheese
1/2 cup milk
1 tsp salt
1/4 tsp black pepper
Topping
1/2 to 3/4 cup ketchup
2 tbsp brown sugar
1 tsp mustard
Mix well.
Preheat oven to 350. In large bowl, mix eggs, crackers, onion, bell pepper, cheese, milk, salt and pepper. Add ground beef and mix to combine, don't over mix. Place meatloaf on parchment paper or foil lined baking sheet. Form into loaf. Bake for 30 min. Remove from oven, spread topping over meatloaf and bake an additional 30-40 min until 160 degrees inside.
