Jalapeno Popper Duo
Prep time: 10 minutes
Cook time: 20 minutes
Servings: 12-16
Jalapeno Poppers are one of our favorite appetizers, but why stop at stuffing them with only cheese? We’re giving them two new, festive variations: Eckrich® Off the Bone Ham with Swiss cheese, pickles and mustard, reminiscent of a Cubano sandwich, and Eckrich® Smoked Sausage, cheddar and cream cheese for a zesty and perfectly-spiced bite.
Ingredients
For Ham-and-Swiss Poppers:
● 8 ounces Eckrich® Off the Bone Ham, diced
● 12 medium jalapenos
● 8 ounces Swiss cheese, shredded or diced
● 1/2 cup Kosher dill pickles, diced
● 1 tablespoon Dijon mustard
For Sausage Cheddar Poppers:
● 1 (10- or 14-oz.) package Eckrich® Smoked Sausage, diced
● 12 medium jalapenos
● 8 ounces yellow cheddar, shredded or diced
● 8 ounces cream cheese, room temperature
● 2 green onions, trimmed and diced
Preparation
1. PREHEAT oven to 400°F. Slice jalapenos in half and scrape out seeds and stems. Arrange
jalapenos cut-side-up on rimmed baking sheets.
2. COMBINE ham, Swiss cheese, and pickles in medium bowl. Add mustard and toss to coat.
Spoon mixture into 24 jalapeno halves, mounding slightly.
3. COMBINE sausage, cheddar, cream cheese and green onions in medium bowl. Spoon mixture into 24 jalapeno halves, mounding slightly.
4. BAKE jalapeno poppers for 20 minutes, until cheese is melted and bubbling. Serve warm.

Staged in conjunction with Texas State's 2012-2013 Common Experience theme, the Wittliff Collections present a conversation with four writers featured in the literary exhibition, Global Odyssey: From Texas to the World and Back. The writers—all of whom are members of the Texas Institute of Letters—will discuss a variety of global experiences that have inspired their creativity while at the same time underscoring their distinctive heritage as Texans.
Stephanie Elizondo Griest, a native of Corpus Christi, is the author of Around the Bloc and Mexican Enough. Griest lived and worked in Russia and China as she explored, firsthand, the dissolution of Communism from a uniquely Chicana perspective. To date, she has visited 40 countries and traveled to 49 of the United States.
Manuel Luis Martinez, a native of San Antonio, is the author of three acclaimed novels and is a professor at Ohio State University. In 2011 he received the Dobie-Paisano Fellowship. Mexico looms large in Martinez's work, particularly in his novels Crossing and Day of the Dead.
John Phillip Santos of San Antonio is the first Mexican American Rhodes scholar. Santos worked in New York for several years as a television documentary producer before returning to San Antonio and writing a family memoir, Places Left Unfinished at the Time of Creation, which became a finalist for the National Book Award.
The panel's moderator is Carmen Tafolla of San Antonio. In 2012 Tafolla was named the first Poet Laureate of the City of San Antonio. She is the author of numerous books and is considered one of the madrinas (godmothers) of Chicana/o literature. Her most recent collection of stories is The Holy Tortilla and a Pot of Beans.
