How To make (15) Mexican Spaghetti (Tuesday)
1 pound spaghetti
1 medium onion
chopped
2 teaspoons olive oil
1 clove garlic :
minced
1 cup tomatoes reserved from
Sun Tomatoes Sauteed with Chipolte 2 cups canned crushed tomatoes (about 1 can)
salt and pepper to taste 1 avocado :
peeled and pitted
Cook the spaghetti in a large pot of boiling salted water for about 10 minutes, or until tender, but not soft.
Meanwhile, cook the onion in the olive il in a skillet until softened, about 2 minutes. Add the garlic and cook 30 seconds. Add the reserved chipolte- tomatoes, the canned tomatoes, salt and pepper. bring to a simmer and cook 8-10 minutes.
Finely dice the avocado.
Drain the spaghetti in a colander or large strainer. Ladle a bit of sauce into a large bowl. Add half the pasta and toss to coat. Add the remaining pasta and top with the remaining sauce. Toss to combine. Scatter the avocado over top.

Espagueti Blanco is a Mexican dish of spaghetti noodles and sour cream for a quick and easy, kid-friendly meal.

Ingredients:
-1 lb Spaghetti Noodles thin or regular
-1 teaspoon Salt to season water
-2 tablespoon Butter
-½ cup White Onion Chopped or use 1 teaspoon of Onion Powder
-1 Bell Pepper or diced Jalapeno for spice
-8 oz Sour Cream, Mexican Cream, or Greek Yogurt (add more if you like it creamier)
-½ cup Milk add more if needed
-Salt and Pepper to taste

this is from Marcella hazans cookbook the essentials of classic Italian cooking I got it as a gift from my uncle about 20 years ago and this dish is always by go to because its so simple quick and delicious
ps i did call them noodles once but I do know better and am just bad with words.
Ingredients.
1 pound pasta
Salt
1/3c extra virgin olive oil
2 tsp garlic
Chili pepper to taste
2 tablespoons parsley

Please do not judge this without trying it! ???? when I was a kid, I had an aunt who made this and without knowing at first, I had a plate. After the first bite I’m like, “This isn’t normal, what’s in this?” I’m happily munching away while she explains it’s chorizo & not ground beef, it’s her Mexican spaghetti! ???? ???????? as always, I’m happily using @chorizoeljerezano here ???? don’t forget to place your order with them if you haven’t yet! Mexican Spaghetti
Ingredients
•20 bolitas of @chorizo_jerezano
•1 lb spaghetti, cooked al dente
•1/2 diced onion + 1/4 onion, whole
•2 chiles serranos
•3 cloves of garlic
•3 roma tomatoes, quartered
•1-8 oz can tomato sauce
•Knorr tomato bouillon, to taste
•@cacique Manchego cheese, shredded (as much or as little as you’d like, you can use any melting cheese honestly)
•red pepper flakes, optional
Instructions
1. Fry your chorizo over medium heat until slightly crisp & cooked through. Add in the diced onion & sauté until fragrant.
2. Add the 1/4 onion, serranos, garlic, tomatoes, & sauce to the blender & let it go until it’s all smooth. Pour into the piping hot chorizo & listen for the sizzle!
3. Stir everything to combine & season with Knorr tomoato bouillon to taste. Stir & bring to a simmer. Add in the spaghetti noodles & toss to coat. Top it with Manchego cheese or whatever your favorite cheese is! Cover & allow it all to warm through & melt. Sprinkle over pepper flakes & dig in ????

INGREDIENTS:
1.5 half pounds of beef
16 ounces Spaghetti noodles
1 can of rotel (10 ounces)
1 can enchilada sauce
2 packs Taco Seasonings
1 medium onion
2 tsps Minced garlic
2 tbsp of tomato paste
4 cups beef broth (1 carton)
**Optional - mozzarella and/or sharp cheddar cheese
**for garnish also cilantro or parsley for garnish
