Perfect Shrimp Scampi & Roasted Broccoli #shrimpscampi
In this video I show you step by step how you can make Shrimp Scampi and Roasted Parmesan Broccoli at home. First, you will brine the shrimp in salt and sugar to keep them juicy and moist. Then you poach the shrimp in the broth rather than sauté them, so they cook evenly and don't overcook. Overcooked Shrimp tend to be rubbery and unpleasant to eat. To get a great seafood flavor in the sauce, you make a stock from the shrimp shells. For great garlic flavor, you use a considerate amount of sliced garlic. Served over a bed of pasta you and your family will love this dish. It is in my opinion better than restaurant quality.
Then a side of roasted parmesan broccoli is a perfect match for the scampi. It is so easy! You place your broccoli on a lightly oiled baking pan, sprinkle sliced garlic over the florets, drizzle with lemon juice, a little salt and pepper and sprinkle parmesan cheese on top. Bake on 350 for about 20 minutes.
