Turkey Meatloaf

Ingredients
2 tablespoons olive oil
2 small onions, 1 finely chopped and 1 cut into half-moon slices
3 tablespoons fresh parsley, chopped
1 1/2 pounds dark meat ground turkey
3/4 cup plus 3 tablespoons seasoned breadcrumbs
1 large egg
1/4 cup plus 3 tablespoons ketchup
1 teaspoon kosher salt, plus more for sprinkling
1 teaspoon freshly ground black pepper, plus more for sprinkling
Directions
Preheat the oven to 350 degrees F.
Heat 1 tablespoon oil in a small skillet over medium-low heat until hot but not smoking. Add the chopped onion and saute until softened and brown, about 6 minutes. Add the parsley and cook for another minute. Set aside.
In a large mixing bowl, combine the turkey with the breadcrumbs, egg, 1/4 cup of the ketchup, cooked onion mixture, salt and pepper. Mix until fully combined. Form into a loaf and transfer to a 9-by-5-inch loaf pan. Using a pastry brush or the back of a spoon, brush the remaining 3 tablespoons of ketchup over the loaf.
Evenly scatter the sliced onions over the loaf, drizzle with the remaining tablespoon of oil and sprinkle with salt and pepper. Bake until the meatloaf is cooked through, 55 to 60 minutes.

✅Ingredients
MEATLOAF:
• 2 pounds ground turkey
• 1 cup plain bread crumbs
• 1 teaspoon dried basil
• 1 teaspoon dried oregano
• 1 teaspoon dried parsley
• 1 teaspoon salt
• ½ teaspoon black pepper
• ½ cup milk
• 2 tablespoons worcestershire sauce
GLAZE:
• 1 cup ketchup
• ¼ cup brown sugar, tightly packed
• 1 tablespoon worcestershire sauce
• 1 tablespoon red wine vinegar
• ⅛ teaspoon salt
• 1/4 teaspoon red pepper flakes
✅Instructions
00:01:23 - How to make a glaze for meatloaf
1️⃣ 00:00:17 - Preheat oven to 375 degrees. Lightly grease a glass baking pan (9x13) with nonstick cooking spray.
2️⃣ 00:00:23 - In a large mixing bowl combine ground turkey, bread crumbs, basil, oregano, parsley, salt, pepper, milk, and worcestershire sauce. Knead until combined.
3️⃣ 00:01:10 - Shape meat into a log or loaf. This is a free-form loaf so it doesn't need to be perfect.
4️⃣ 00:01:23 - In a small mixing bowl whisk together ketchup, brown sugar, worcestershire sauce, red wine vinegar, garlic, salt, and red pepper flakes. Pour half of this mixture over the meatloaf, reserving the remaining half for later.
5️⃣ 00:02:13 - Bake in the preheated oven for 45 minutes
6️⃣ 00:02:19 - After 45 minutes, remove from oven and pour the remaining sauce over the loaf. Increase temperature to 400 degrees and bake for an additional 15 minutes.
7️⃣ Let rest 5 to 10 minutes before serving.

Smoked Turkey Meatloaf
This smoked turkey meatloaf is great any time of the year but it is especially good for the holidays. We serve this in addition to a whole smoked turkey but trust me, this stands on its own.
Smoked Turkey Meatloaf Recipe:
2 lbs. ground turkey
2 eggs
1 box of StoveTop Stuffing combined with 1 1/2 cup hot water
1/4 Dukes Mayonnaise
1 onion plus 4 celery stalks diced and sautéed in butter
Combine all of the ingredients and shape it into a loaf on a piece of parchment paper. Freeze the turkey meatloaf for one hour before putting it in the smoker. Smoke the meatloaf at 250F until it reaches 165F
