Vegan Adzuki Bean Burger
I normally put the calories in the video but I forgot to and I'm not sure how to edit it yet. LOL....
The whole recipe has just about 415 Calories. That makes it about 103 Calories per burger (not counting your bun and whatever you use as toppings)... Hope you enjoy! Let me know how you like them if you make them!

???? Ingredients:
200g | 1.5 cups chickpeas
100g | 1 medium-sized zucchini
100g | 1 medium-sized carrot
3 broccoli florets
1tsp onion powder
1tsp paprika
1tsp garlic powder
20g | 1/6 cup chickpea flour
1tbsp corn starch
salt to taste
???? sweet potato mash ingredients:
1 medium-sized sweet potato
1 carrot
80ml | 1/3 dairy-free milk
1tbsp nutritional yeast
salt and black pepper to taste
Fresh dill
Chilli flakes
????????Cooking tips:
❗Feel free to add your favourite herbs and spices to the recipe to get your favourite flavour.
❗ For the patties to hold together place patties mixture in to the fridge for 30-60 minutes. It works miracles and you do not need a binder ???? If you feel like you need a diner add some flaxseed. ????
❗With the ingredients listed in the recipe you get about 8 patties.
❗These veg patties can be used to make a delicious vegan burger
???? Method:
Add 100g | 1 cup cooked chickpeas to a large bowl.
Mash with fork.
Grate 100g zucchini.
Grate 100g carrot.
Finely chop 3 broccoli florets.
Add 100g cooked chickpeas.
Season with 1tsp onion powder, 1tsp paprika, 1tsp garlic powder.
Add 20g | 1/6 cup chickpea flour, 1tbsp corn starch, and salt to taste.
Combine well and transfer to the fridge for 20-60 minutes [it helps patties to hold together].
Peel and cut into pieces 1 medium-sized sweet potato.
Transfer to a steamer
Cut 1 carrot and transfer to a steamer.
Steam sweet potato and carrot for 20 minutes or until cooked.
Heat a little oil in a non stick skillet.
Take the mixture from the fridge and shape into patties.
Fry with the lid on for about 5 minutes or until the bottom is golden brown and crispy.
Flip to the other side, pour 50ml | 4tbsp water and cook with the lid on for about 15 minutes.
Transfer cooked sweet potato and carrot into a bowl.
Add 80ml | 1/3 dairy-free milk and 1tbsp nutritional yeast.
Season with salt and pepper.
Mash with potato masher or use a hand blender.
Serve chickpea patties with mashed sweet potato, sprinkle with fresh dill and red chilli flakes (optional).

How to make veggie burgurs!

Veggie Burger/ Turkey Burger
1 cup Black beans (chopped)
1 cup Fava beans (chopped)
1 cup Garbanzo beans (chopped)
½ cup yellow bell pepper (small dice)
4 tb pineapple puree
2 cups kale grilled (with olive oil, sea salt, & pepper
1 red potato (minced with 1 serrano pepper and ¼ onion)
4 tb teriyaki sauce
1 bunch herbs ( dill, cilantro, parsley chopped)
1 whole wheat burger bun
2 eggs
2 tb whole grain mustard
½ lb ground turkey (for the turkey burgers, omit if just veggie burgers are desired)
To taste…sea salt & pepper
1 tsp cumin
½ lemon (juiced)
Procedure:
Combine all ingredients together and form patties. Add turkey for the turkey burgers, omit if veggie burgers are desired.
Heat grill and brush on olive oil. Place patties on grill and cook for 3 min on each side.
Place patties on whole wheat bun, or on grilled Portobello mushroom caps. You can really use anything you want; you can even eat the patties by themselves!
Grilled Asparagus and Lil Jem Salad
1 bunch asparagus ends trimmed
10 Lil jem lettuce leaves
1 tb olive oil
To taste…sea salt & pepper
¼ lemon (juiced)
Handful of parsley, cilantro and dill chopped
Procedure:
Heat grill brush with olive oil.
Place asparagus and lil jem on grill drizzle more olive oil, sea salt and pepper.
Squeeze lemon juice cook until charred about 2 minutes.

Open Bean Burgers
Tangy and lip-smacking, these bean burgers are truly irresistible! made of crisp buttery buns loaded with a mixture of sautéed onions, green chillies, baked beans, spaghetti and tomato ketchup, mellowed down with a light dash of white sauce, every mouthful of this sumptuous snack is a splurge of well-balanced flavours.
Preparation Time: 15 minutes.
Cooking Time: 7 minutes.
Makes 4 open burgers.
Baking Temperature: 200°C (400°F).
Baking Time: 15 minutes.
For the topping
¾ cup baked beans
1 tbsp melted butter
½ cup finely chopped onions
1½ tsp finely chopped green chillies
2 tbsp tomato ketchup
¾ cup cooked spaghetti
Salt to taste
Other ingredients
2 burgers buns
Melted butter for brushing
4 tbsp white sauce
4 tbsp grated processed cheese
For the topping
1. Heat the butter in a broad non-stick pan, add the onions and green chillies and sauté on medium flame for 1 to 2 minutes.
2. Add the baked beans and tomato ketchup, mix well and cook on a medium flame for 1 minute.
3. Add the spaghetti, mix well and cook on a medium flame for 1 to 2 minutes, while stirring occasionally.
4. Add the salt, mix well and cook on a medium flame for 1 to 2 minutes, while stirring occasionally.
5. Divide the topping into 4 equal portions and keep aside.
How to proceed
1. Cut the bread buns into halves horizontally.
2. Scoop out the centres of each bread bun halve and brush each halve with a little melted butter.
3. Arrange the bread halves on a greased baking tray and bake in a pre-heated oven at 200°C (400°F) for 10 minutes.
4. Fill a burger bun with a portion of the topping and spread 1 tbsp of white sauce and finally 1 tbsp of cheese over it.
5. Repeat step 4 to make 3 more open burgers.
Serve immediately.
Greek Fava Dip: Split Pea Dip (Vegan)
Serves 3-4:
½ cup (100g) yellow split peas, rinsed and soaked for 30 minutes
½ small onion, sliced
1 garlic clove, peeled
2-3 tablespoons light olive oil,
1 teaspoon dried crushed oregano
½ teaspoon of salt, or to taste
Freshly ground black pepper
Juice of half a lemon, or to taste
Garnish options:
½ teaspoon capers
1 scallion, finely sliced
Kalamata olives
Sundried tomatoes, packed in olive oil
Toasted pine nuts
Fresh parsley, finely chopped
Drizzle of good quality Greek olive oil
Rinse the split peas with cold water until the water runs clear. Soak at least 30 minutes.
Place the sliced onions, garlic and olive oil in a small pot and cook over high heat until golden. About 5 minutes.
Drain the water from the split peas and add to the pot along with salt, oregano, and black pepper. Pour 2-3 cups hot water over top, bring to a boil and reduce the heat to medium low.
Cook, stirring every few minutes and adding more water (half cup each time) when necessary. Cook until the split peas are soft. About 1 cup of liquid should remain in the pot at the end of cooking.
Puree the mixture until smooth.
Season with more salt and pepper if desired.
Add the lemon juice and mix to combine.
Garnish with your favorite toppings and serve with vegetables and/or warm bread.
