HOT SAUCE! 10 Month Ferment, 7pot Brainstrain Yellow and Pear chilli sauce
Making fermented hot sauce with 7Pot Brainstrain Yellow and Pears, both grown in my garden. This is the last fermentation from my 2017 season. It has been fermenting since August 2017, so 10 months!
Looking forward to doing loads more sauces at the end of the 2018 season!

Making INSANELY hot fermented 7Pot Brainstrain Chilli Sauce
In this video I make some stupidly hot Fermented hot-sauce using some beautiful Yellow 7Pot Brainstrain peppers. The heat of this rivals my bottle of Daves Insanity Sauce!
Fermenting food is great fun. Just be sure to be safe! Make sure everything is clean and sanitised. Run your jars through the dishwasher. If you see any strange moulds or there is a strange smell, then don't eat it! Otherwise, as long as you see some fermentation activity after a few days (bubbles rising from the peppers) then you should be safe.
Ingredients:
- Ripe 7Pot Brainstrain Yellow Peppers
- Garlic
- Salt for brine (Kosher, Sea Salt, or Pickling salt)
- Water
- Time!

THINGS YOU’LL NEED:
¼ cup olive oil
4 large bell peppers sliced into strips (red is best, but you can use orange or yellow as well)
2 pounds plump tomatoes blanched, peeled and chopped(and seeded, if desired – canned works great, too)
1 medium onion sliced (white or yellow)
4 cloves garlic chopped
Salt and pepper to taste
Basil leaves for serving
Spicy pepper flakes and balsamic vinegar for serving optional
