2 c Sifted flour 2 ts Baking powder 1 ts Baking soda 1/2 ts Salt 2 Eggs, well beaten 2 c Eggnog 6 tb Vegetable oil 1 c Chopped nutmeats, pecans or English walnuts Sift flour with baking powder,soda and salt.Combine eggs,eggnog and shortening.Add mixture to sifted dry ingredients.Mix until smooth.Fold in nuts.Bake waffles in a preheated waffle iron until steam no longer escapes from the grid.

1 cup self rising flour 1/2 tsp baking soda 1 tsp ground ginger 3/4 tsp ground cinnamon 1/4 tsp ground nutmeg 1/8 tsp ground cloves 1/8 tsp ground allspice 1/8 tsp ground cardamom 3/4 cup eggnog 1 jumbo egg, separated 1/3 cup packed dark brown sugar 1/4 cup molasses 1 tsp vanilla extract 3 tbsp unsalted butter, melted 1/8 tsp cream of tartar Powdered Sugar, Whipped Cream, Ground Cinnamon and Syrup, For garnish
In a large bowl, whisk together the flour and spices, set aside. In a small bowl, beat the brown sugar and egg yolk until fluffy; add the eggnog, molasses, vanilla, and butter. Stir into dry ingredients just until combined. In another small bowl, beat the egg white and cream of tartar until stiff peaks form. Gently fold into batter. Quickly spoon onto a preheated sprayed waffle iron. Bake until golden brown about 5-7 Minutes. Sprinkle with powdered sugar, whipped cream, syrup and ground cinnamon and enjoy!

Egg Nog Waffles
I love egg nog, but I can only drink so much of it before I get full, so I thought that a good way to use leftover eggnog was to incorporate it in waffles. Essentially this is a recipe I've used for years with buttermilk, but using eggnog instead gives that wonderful flavor of eggnog to the waffles, while enabling the waffles to maintain their moisture, which is so important. I use 1/2 all purpose flour and 1/2 whole wheat flour, which gives it a nice chewy texture. You'll notice that the batter isn't as watery as other pancake/waffle batter, and that's intentional. By keeping the batter as dry as possible, you avoid the runny waffles and they cook much more evenly in the waffle iron.
