How To make Black Bean Sauce Squid
1 lb Squid, cleaned
-Chinese-style (see below) 2 tb Fermented, salted black
-beans (available at Asian -groceries) 2 Cloves garlic, minced
2 tb Rice wine, or 2 Tbs mirin
-or sherry 1 ts Ginger, grated
2 Scallions, chopped into
-1/2-inch pieces 1 Tb regular soy sauce
1 ts Sugar
1 ts Cornstarch dissolved in
1 tb Water
2 tb Vegetable oil
Many people shy away from dishes with names like Black Bean Sauce Squid because they think it involves the preparation of a complicated sauce. In fact it is quite easy. The black beans themselves, fermented and salted when you buy them, are the sauce. All you do is add a little rice wine to make a paste. Then it's just like any other stir-fry++a couple of minutes of high-heat cooking, continuously stirring, and the dish is done. Prepare black bean sauce mixture by adding to the beans: rice wine, soy sauce and sugar. Let sit for 15 minutes. Saute garlic and ginger in the oil over medium heat in a heavy frying pan or wok until garlic is slightly browned. Turn up heat. Add squid and scallions. Stir-fry for 30 seconds. Pour in black bean sauce mixture, and cook for 2 minutes. Add cornstarch and, when sauce thickens, remove from heat and serve. [Score squid diagonally at three quarter inch intervals. Turn and repeat at right angles to original cuts. Don't cut all the way through the squid body. Cut each scored squid body into three or four pieces. When cooked, the squid will roll up and the crosshatching will catch and hold the sauce. It's much easier to do than to describe. Squid and bell pepper stir-fry – this is a simple recipe but quite tricky to cook it perfectly. The squid is very tender but a little bit bouncy. The sauce is so flavorful and little bit sweet. We usually serve it with white rice. I hope you can give this a try soon.

**Ingredients for the sauce**
- 1 tsp of cornstarch [生粉]
- 1 tbsp of Chinese cooking wine [料酒] [Amazon Link:
- 1 tbsp of soy sauce [生抽] [Amazon Link:
- 2 tbsp of oyster sauce [蚝油] [Amazon Link:
- 1 tbsp of water [水]
- 1 tsp of sugar [白糖]
- 1 tsp of black pepper [黑胡椒]
- 1 tsp of dark soy sauce for the color [老抽] [Amazon Link:
**Ingredients for stir fry**
- 12 ounces of squid [鱿鱼]
- Few slices of ginger for blanching the squid [姜片]
- 2 tbsp of oil to stir-fry [油]
- Some ginger strips [姜丝]
- 3 cloves of minced garlic [蒜末]
- Some white part of spring onion [葱白]
- 1/2 of red bell pepper [红彩椒]
- 1/2 of green bell pepper [青圆椒]
Instruction:
- Clean the squid and remove the skin.
- After that, use your knife to create some patterns on the squid so it will look better and be more tender. Make sure the inside part is facing up. Run your knife gentle and evenly but don’t cut off. Switch an angle, do the same thing again. Then cut the squid into small pieces.
- Also, cut the wings the same way and cut the tentacles into small pieces.
- Next, we will quickly blanch the squid. Prepare a pot of water. Add few slices of ginger. Bring the water to a boil. My rule for cooking squid is – eight it is less than 2 minutes or more than 2 hours. Anytime between that, it is going to be tough. So we will just put this in for only 10 seconds. This is just to remove the bad smell. Then quickly take it out. Rinse the squid under cold water and drain it completely.
- Now let’s make the sauce (1 tsp of cornstarch, 1 tbsp of Chinese cooking wine, 1 tbsp of soy sauce, 2 tbsp of oyster sauce, 1 tbsp of water, 1 tsp of sugar, 1 tsp of black pepper, 1 tsp of dark soy sauce)
- Mix that up and the sauce is done. Let’s start cooking.
- Turn the heat to high, add 2 tbsp of oil. Wait for the wok to get hot. Add some ginger strips, garlic, white part of spring onion. Stir this until fragrant.
- Add the bell pepper. Stir them for about 3 minutes or whenever you think the pepper is ready.
- Add in the squid. Remember I said, we need to cook the squid less than 2 minutes. We already blanch the squid for 10 seconds, now you only got 1 minute and 50 seconds left. Make sure you use the highest heat possible. This is the key to Chinese stir-fry dish. Everything needs to cook really fast in the wok. If you use low heat, it will take longer to cook and the food will starts producing water which you don’t want that.
- Add the sauce 20 seconds before you turn off the heat. Toss everything together. Count the time correctly and you can take it out. Serve it with white rice.

Chinese Stir Fry Squid in Black Bean Sauce (Asian Style Cooking Recipe)
Welcome to my Asian kitchen. My name is Xiao Wei and my goal is to make your cooking simple and exciting. Ever since my Mother showed me how to cook at an early age, I have always had a strong passion for cooking. My family still live in Inner Mongolia in the northern part of China, where I visit each year and learn new Chinese recipes.
It's best to use baby squid as they are much more tender.
Ingredients:
250g Squid
220g Broccoli
4 Cloves Garlic
0.5cm Ginger
1 Spring Onion
120g Black Bean Sauce
Methods:
Chop the ginger, garlic and spring onion
Cut broccoli into bite-sized pieces and place on a dish for later
Crosscut the squid – do not cut through like so
Boil 1 litre of water in a pan and blanch broccoli for a minute then drain
Place squid into the same water for about 10 seconds until each piece curled and drain
Heat 1 tablespoon of oil in a wok until smoking hot
Add garlic, ginger and spring onion and fry for few seconds
Add black bean sauce and fry for a minute
Add squid and broccoli and stir fry for a minute
Drizzle few drops of sesame oil and salt to your taste
